Cajun Chow Mein

2 tablespoons olive oil
1/2 cup chopped celery
1/2 cup chopped green bell pepper
1 clove garlic, chopped
1 small onion, minced
1 pound ground beef or turkey
1 (16 ounce) can tomatoes
Salt and pepper, to taste
1 cup uncooked rice
1 cup water
Sauté first 4 ingredients in oil. Add ground meat and brown. Stir in rice, seasonings and water. Bring to a boil; reduce heat, cover and simmer about 20 minutes or until rice is done.
