Downright Easy Jambalaya

1 package Zatarain's dirty rice mix
1 onion, chopped
1/2 green bell pepper, chopped
2 stalks celery, chopped
1/2 cup vegetable oil
2 chicken breasts
1/2 pound smoked sausage
1 (8 ounce) jar sliced mushrooms, drained

Cook the rice according to package directions. This is best done in a rice cooker, but a microwave is all right. Sauté the onion, bell pepper and celery in cooking oil. Boil the chicken breasts and cut them into bite-size pieces. Parboil the sausage. Drain and chop finely or pulse in food processor. Combine all ingredients and adjust seasonings. Let sit for at least 1 hour.

Warm in microwave, taking care not to stir too much. The flavor is best when the rice kernels are unbroken and not mushy.

Serves 10.
