Shrimp and Pepper Rajas

3 bell peppers - mixed colors
1 bunch scallions, cleaned and sliced into 2-inch long pieces
8 ounces cleaned and cooked medium shrimp, sliced in half
1 cup pepper jack cheese

In a nonstick skillet or a nonstick griddle over medium high heat, arrange the peppers and scallions so they are evenly distributed and attractive. Cook until brown on the bottom, about 8 to 10 minutes.

Top with shrimp and sprinkle with cheese. Remove from heat when cheese is melted.

Serves 6 to 8 as appetizers.
