Spicy Cabbage
2 tablespoons vegetable oil
1 medium onion, chopped
2 cloves garlic, minced
2 jalapeņo peppers, seeded and chopped
1 medium green or red bell pepper, chopped
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground turmeric
1/2 teaspoon salt
2 medium tomatoes, coarsely chopped
1 small head green cabbage, thinly sliced
1 tablespoon vinegar
Heat oil in 12-inch skillet until hot. Cook and stir onion, garlic, jalapeņo peppers, green pepper, cumin, coriander, turmeric and salt over medium heat until onion is tender, about 5 minutes.
Stir in tomatoes and cabbage. Heat to boiling; reduce heat. Cover and simmer until cabbage is tender, about 12 minutes. Stir in vinegar.
Yields 8 servings.
