Sweet Rice with Cinnamon (Roz Mafooar — Morocco)
1 1/3 cups regular rice
2 2/3 cups water
1/2 teaspoon salt
1/4 cup butter or margarine
1/4 cup confectioners’ sugar
Ground cinnamon
Heat rice, water and salt to boiling in 3-quart saucepan, stirring once or twice; reduce heat. Cover and simmer 14 minutes without lifting cover or stirring. Remove from heat. Fluff rice lightly with fork; cover and let steam 5 to 10 minutes.
Stir in margarine and confectioners' sugar. Sprinkle with cinnamon; serve warm.
Yields 6 servings.
