Scandinavian Hamburgers (Biff à la Lindstrom)

1 pound ground beef
1 egg
1/2 cup cold mashed potatoes
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup minced pickled beets
2 tablespoons minced onion
2 tablespoons capers

Mix beef, egg, potatoes, salt and pepper. Stir in remaining ingredients. Shape mixture into 4 patties, each about 1 inch thick.

Set oven to broil or 550 degrees F. Broil patties with tops about 4 inches from heat until desired doneness, 6 to 8 minutes on each side for medium.

Top each patty with fried egg if desired.

Yields 4 servings.
