Pebre (Chilean Hot Pepper Sauce)

1 medium onion, finely chopped
1 to 2 cloves garlic, finely chopped
3 tablespoons finely chopped fresh cilantro (coriander)
2 tablespoons finely chopped fresh parsley
1 to 6 fresh hot green chile peppers,
    seeded and finely chopped
4 tablespoons olive oil
1 tablespoon lemon juice
Salt, to taste

Combine all ingredients in a small bowl and allow to sit at room temperature for at least 1 hour.

Makes about 1 cup.
